Today we present an irresistible treat: our“Apricot Warm Heart Cookies.” These tender round cookies, full of flavor and love, are a perfect combination of the softness of shortbread pastry and the enveloping sweetness of apricot jam.   • 200g of butter at room temperature

  • 100g caster sugar

  • 1 whole egg

  • 1 teaspoon vanilla extract

  • 300g of 00 flour

  • 1 pinch of salt

  • Apricot jam


1. Dough Preparation:

  • In a large bowl, beat soft butter and caster sugar until creamy.
  • Add the egg and vanilla extract, continue mixing until the ingredients are well incorporated.
  • Add the flour and pinch of salt and mix until a smooth dough forms. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.

2. Cookie Forming::

  • Take the dough from the refrigerator and roll it out on a lightly floured surface until it is about 1 cm thick.
  • Use a round cookie cutter to cut circles of dough.
  • For half of the circles, use a smaller heart-shaped cookie cutter to remove a heart in the center….
  • Place the cookies on a baking sheet lined with baking paper and bake in a preheated oven at 180°C (350°F) for about 10 to 12 minutes, or until golden brown on the edges.

3. Assembly of Cookies:

  • Once cooled, spread a small amount of apricot jam on the whole cookies.

  • Overlap the cookies with the heart in the center on top of the filled cookies, thus forming heart-shaped cookies with jam in the center.

4. Service:

  • Allow the cookies to cool completely before serving.
  • Store the filled cookies in an airtight container at room temperature to keep them fresh and crisp.
