1. 250g of 00 flour

2. 125g cold butter, cut into cubes

3. 100g of powdered sugar

4. 1 whole egg

5. Grated zest of 1 lemon (optional)

6. A pinch of salt

1. 300g black mulberry compote

2. Fresh mulberries cleaned

1. Preparing Short Crust Pastry:

  • In a large bowl, sift the flour and mix with the powdered sugar and pinch of salt.
  • Add the cold cubed butter and work it quickly with your hands until you have a sandy mixture.
  • Add the egg and grated lemon zest (if desired) and knead quickly to form a smooth dough. Wrap it in plastic wrap and let it rest in the refrigerator for at least 30 minutes.

2. Assembling the Tart:

  • Preheat the oven to 180°C (350°F).
