Pan-fried pork tenderloin

Ingredients

  • 4 pork tenderloins (about 150g each)
  • Salt and pepper to taste.
  • Lucia Oil No. 15 P.D.O. Monte Etna
  • 200g Cream of Pumpkin and Capers
  • 150g Beet, Leek and Almond Pesto
  • 2 cloves of garlic, finely chopped
  • 2 sprigs of fresh rosemary

Proceedings

1. Preparation of Pork Fillets::

  • Heat a nonstick skillet over medium-high heat and add a drizzle of Lucia No. 15 oil.
  • Season the pork tenderloins with salt, pepper, minced garlic and rosemary leaves.
  • When the pan is hot, add the pork tenderloins and cook them for about 4 to 5 minutes per side, or until they are golden brown and fully cooked.

2. Preparation of Sauces:

  • Lightly heat the Cream of Pumpkin and Capers with a drizzle of oil in a small saucepan over low heat, stirring occasionally until well heated.
  • Also heat the Beet, Leek and Almond Pesto with a drizzle of oil in another pot over low heat, stirring until well heated.

3. Meat grilling:

  • Place the pieces of meat on the hot grill.

  • Cook the meat for about 8-10 minutes per side, turning it once, until it is golden brown and cooked to the desired doneness (cooking time depends on cooking preference and size of meat pieces).

4. Service:

  • Transfer the pork tenderloins to a serving platter.
  • Pour the Creamed Pumpkin and Capers on some pork tenderloins and the Beet, Leek and Almond Pesto on the tenderloin, or serve them separately as condiments of the diners’ choice.
