The cooking process is low/medium cooking that is, we do not exceed 85°, and there is part of the peel in the mixture that gives it structure and color. The figs used are the black and white brogiotto type.

Compared with extra jam and marmalade, only seasonal fruit is used in fruit compote and in larger quantities. The fruit is cut into larger pieces and cooked at lower temperatures, making it softer. Sugar content is reduced and does not exceed 30%.

Fig compote is an excellent addition to many sweet and savory recipes. It can be paired with cheeses such as gorgonzola or pecorino, meats such as ham or chicken, or used as a filling for pies and cakes. Fig compote can also be used as a topping for yogurt or ice cream.
