We turn oranges into fruit compote by adding organic cane sugar and lemon juice; the peels, in addition to infusing the classic citrus aroma into the compote, are naturally rich in pectin giving structure to the compote; the pulp, on the other hand, imparts the bitter note that rounds out the range of unique flavors of this product.

Compared with extra jam and marmalade, only seasonal fruit is used in fruit compote and in larger quantities. The fruit is cut into larger pieces and cooked at lower temperatures, making it softer. Sugar content is reduced and does not exceed 30%.

Bitter orange compote is a very versatile ingredient in cooking. It can be paired with cheeses such as gorgonzola or pecorino, meats such as lamb or chicken, or used as a dressing for salads and fish dishes.
